Description & SpecificationsCraftsmanship, materials & dimensions
The Shinko Series Damascus Japanese knife set brings together five essential handcrafted Japanese blades – Gyuto, Kiritsuke, Santoku, Nakiri and Petty – in one matched collection. Each knife is forged with 110 alternating layers of AUS-10 and VG-10 steel (55 of each), combining razor-sharp performance, toughness and a striking Damascus ripple on every blade.
This 5-piece Damascus knife set covers everything from large cuts to delicate detail. The 8" Gyuto is the all-purpose Japanese chef's knife for slicing, chopping and dicing. The 8.5" Kiritsuke is a versatile hybrid with a distinctive angled tip, combining the slicing ability of a Yanagiba with the chopping power of a Gyuto. The 7" Santoku – "three virtues" – excels at slicing, dicing and chopping, the 7" Nakiri is a traditional straight-edged vegetable knife for clean push cuts, and the nimble 5" Petty handles peeling, trimming and garnishing in-hand or on the board.
Every blade is double-bevel with a 9–12° per-side edge and a hardness of around 60 HRC, built with full-tang, hand-forged construction for strength and balance. The stabilized maple–resin handles with polished bolsters are ergonomic and water-resistant, and each one has its own unique marbled pattern. Matched craftsmanship across all five knives makes this VG-10 and AUS-10 Damascus kitchen knife set a cohesive collection rather than a mix of odd pieces.
Built for chefs, collectors and serious cooks, this Japanese Damascus chef knife set gives you the right blade for vegetables, proteins and fine detail work. Buying the complete set also costs less than purchasing each Shinko knife individually.
Each knife arrives in its own gift-ready storage box with a protective sheath, which makes the collection display-ready and an exceptional gift for chefs. It is a memorable anniversary gift, a luxurious wedding gift for a couple who loves to cook, or a Christmas gift for the collector who already has everything.
To care for your knives, hand-wash and dry immediately and never use the dishwasher. Use wood or soft plastic cutting boards instead of stone, marble or glass, maintain the edges with whetstones, and store the knives safely in their boxes, a knife block or on a magnetic strip.
